And the lungs, breathing continuously, drawing in oxygen and releasing carbon dioxide with every breath.
The liver, carrying out countless metabolic processes – regulating, storing, synthesizing, and detoxifying.
The kidneys, tirelessly filtering the blood, preserving its delicate balance, and removing what the body no longer needs.
The pancreas, performing its digestive and hormonal functions.
The hormone system, coordinating countless processes with incomprehensible sophistication.
The reproductive system – a design through which generations succeed one another.

And what an astonishing beginning – from a tiny, seemingly insignificant drop, an entire human being begins to unfold.

It's a call to look deeper, to live intentionally, and to seek the Creator through the intricate beauty of creation.
And if you count the blessings of God, you will not be able to number them (16:18, 14:34)

One argument is that these phrases are about invoking God's name before eating, not before the animals are slaughtered.
Please note the verb form used,
6:121 وَلَا تَأْكُلُوا /And do not eat (2nd person masculine plural)

To conclude, I interpret verses 6:118, 119, 121, etc. refer to an obligation to acknowledge, ideally, from before the slaughtering takes place, (being grateful for providing the animal as sustenance 22:28, 34, 36, see also 22:40, 24:36, 76:25 etc.)

For concerns about animal welfare and ethical conduct, there are numerous verses that we can relate to,

Who created the death/lifelessness and the life to test you which of you is better in deeds (67:2)
..so race/surpass each other in doing good deeds (2:148, 5:48)
..So whoever is expecting his Lord's meeting, so he makes/does righteous deeds (18:110)
And there is not a creature on the earth, nor a bird that flies with its wings, except they belong to nations like you belong. We did not leave anything out of the record; then to their Lord they will be gathered. (6:38)
..like that We manipulated/subjugated it for you, so that you may be grateful (22:36)

Although "to remember, bear in mind," etc., seems to be the basic meaning, I'm unsure about the exact implications of "dh-k-r" in the above verses, as its meaning can vary depending on the context (e.g., 21:36, 21:60, etc.). Ultimately, it's up to the believer to determine the best fitting interpretation for 6:118,119, & 121 and decide on halal certification/labels.

I already shared my view regarding the verses like 2:62, 5:69 etc.
And I suggest you to read the verses 5:77-86, 2:38-39 etc. if you are still in doubt.

"We do not abrogate/abolish/erase/nullify from a sign/verse/evidence, or We make it forgotten, (except that) We
come/bring with better than it, or similar/equal/alike to it. Do you not know that God (is) on every thing powerful/capable."
