In the story of Moses meeting a Servant of Allah from verse 18:65 onwards, the following is mentioned;

قَالَ سَتَجِدُنِي إِنْ شَاءَ اللَّهُ صَابِرًا وَلَا أَعْصِي لَكَ أَمْرًا
Moses said: "Thou wilt find me, if Allah so will, (truly) patient: nor shall I disobey thee in aught."

However, Moses could not remain patient.

Any thoughts?

We humans have been given free choice. Moses could not remain patient because of his choice of not remaining so.
He said إِنْ شَاءَ اللَّهُ because he needed to have Allah's approval (mashee'at) for his action. The whole story narrated therein is explaining that at times Allah's wish overtakes our choices. So whatever we plan to do using our choice we must say إِنْ شَاءَ اللَّهُ to seek Allah's wish. Our choice can be ineffective if Allah's wish is different.

Please see this Ayaah where Allah says you do not please except where Allah pleases
وَمَا تَشَاءُونَ إِلَّا أَن يَشَاءَ اللَّهُ رَبُّ الْعَالَمِينَ

And you do not please except that Allah please, the Lord of the worlds.

In 18:67-68, the servant of Allah categorically states that Moses will not be able to bear with him, because he (Moses) will be witnessing things that are beyond his (Moses') knowledge and experience.

But since Moses was full of enthusiasm as regards seeking knowledge from that servant of God, he could not but express the hope that God may still fulfill his wish to know (something) from the servant of God.

And so his reply as in 18:69.

But the servant of God's prediction came true, as that was what God willed.
